I have avoided gluten for the past 4 years or so. It wasn’t until I went to visit my cousin Gustav is Sweden (check his website out…he’s a badass) that I knew anything about the benefits of sourdough bread. He was bringing home these gorgeous loaves of bread and felt like he was torturing me with them until he told me in his very matter of fact Swedish way, “you can eat these you know….they are sourdough”. Of course I had to do all kinds of google research first before diving into a piece, but wow….what an amazing taste after eating all of the gross gluten free varieties of bread over the years. I’m not going to lie…I was still nervous. My gluten sensitives effect my stomach. ‘Nuff said.
A week of non-stop sourdough bread gorging later… and nothing! I was amazed! We returned home from the trip and Danny and I immediately started working on our own sourdough starter who we named Fermentation Fred. Just Fred for short. This is my sourdough story and I’d love to hear yours!
